La Ancha opens a restaurant at the Thompson Madrid hotel | Fortune

Opens TheOmar, the first of the three gastronomic concepts that the Familia La Ancha restaurant group, founded in 1919 by Benigno Redruello, has designed for the new Thompson hotel – the first to open under the Hyatt chain brand in Europe – in Plaza del Carmen from Madrid.
Inspired by the new Parisian and London bistros, the space has been conceived by Nino Redruello and Patxi Zumarraga, partners and chefs of the group, with some influence brought from Zak The Baker in Miami and other bakeries in the United States. The design is signed by Invisible Architecture.

It will be followed by the opening of Children of Thomasa cocktail bar with classic drinks that will liven up the night in Madrid and, finally, the gastronomic size which will open in the coming months.

The menu at The Omar is simple, with proposals reminiscent of the famous Fismuler, although in smaller and more individual formats, such as small bites such as Ondarroa tuna and choricero ponzu, brava ear sandwich, or starters such as acid soup, king grilled krab and zucchini; young leek tart tatin with truffle, puff pastry terrine of tongue and foie, or fish such as the menier sole with black garlic and mushrooms, hooked squid, or the Iberian pork chop and Espelette butter.
